Pork chops with scalloped potatoes

1️⃣ Preheat & Prep
Preheat oven to 375°F (190°C).
Lightly grease a baking dish.
2️⃣ Sear the Pork Chops
Season pork chops with salt, pepper, and paprika.
Heat oil or butter in a skillet over medium-high heat.
Sear chops 2–3 minutes per side until lightly golden (they’ll finish cooking in the oven).
Set aside.
3️⃣ Make the Sauce
In the same pan, melt butter.
Add garlic and onion; sauté until soft.
Stir in flour and cook 1 minute.
Slowly whisk in milk.
Season with salt, pepper, and thyme.
Simmer until slightly thickened.
4️⃣ Assemble
Layer half the potatoes in the baking dish.
Pour half the sauce over potatoes.
Add remaining potatoes and sauce.
Place pork chops on top.
Optional: sprinkle cheese over everything.
5️⃣ Bake
Cover with foil and bake 40 minutes.
Uncover and bake 20–30 minutes more, until potatoes are tender and chops reach 145°F (63°C) internal temperature.
6️⃣ Rest & Serve
Let rest 5 minutes before serving.
Spoon sauce over pork chops when serving.

Slice potatoes very thin for even cooking.
Bone-in chops stay juicier.
For extra flavor, add a splash of chicken broth to the sauce.
Leftovers reheat well the next day.
