Apple Cinnamon Breakfast Loaf

  1. Preheat Oven & Prep Pan
    Preheat the oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.
  2. Mix Wet Ingredients
    In a medium bowl, whisk together eggs, sugar, oil, milk, and vanilla extract until smooth and pale.
  3. Combine Dry Ingredients
    In a separate bowl, whisk flour, baking powder, cinnamon, and salt.
  4. Fold Together
    Gradually add dry ingredients to wet ingredients, folding gently until just combined. Avoid overmixing; a few small lumps are okay.
  5. Add Apples & Nuts
    Fold in diced apples and nuts if using.
  6. Pour & Top
    Pour batter into prepared pan. Sprinkle cinnamon sugar on top for a crunchy, sweet crust.
  7. Bake
    Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean. If the top browns too quickly, cover loosely with foil.
  8. Cool & Serve
    Let the loaf cool for 15 minutes in the pan, then transfer to a wire rack. Slice and enjoy warm or at room temperature.
