Zesty Italian Chicken

Instructions

  1. Arrange the Chicken: Place your raw chicken breasts in an even layer at the bottom of the slow cooker.

  2. The “Dump”: Pour the entire bottle of Italian dressing over the chicken until it is well-submerged.

  3. Season: Sprinkle the Parmesan cheese (or dry seasoning) evenly over the top.

  4. Slow Cook: Cover and cook on Low for 6–8 hours or High for 3–4 hours.

  5. Serve: You can serve the breasts whole with a spoonful of the sauce from the pot, or shred the chicken directly in the cooker to soak up all that zesty flavor.

Why This Works

The acidity in the Italian dressing acts as a natural tenderizer, breaking down the chicken fibers until they are fork-tender. It’s an effortless way to get a “marinated” taste without actually having to marinate anything in advance.

What to Serve it With

  • Pasta: Toss the shredded chicken and extra sauce with rotini or penne.

  • Rice: Serve over a bed of white or jasmine rice to absorb the juices.

  • Salad: Slice the chilled leftovers for the best Italian chicken salad you’ve ever had.
