Smoked Brisket & Beer Cheese Pretzel Bombs

🥨 1. Prepare the Pretzel Dough
1. In a large bowl, mix warm water + sugar + yeast.
2. Let it sit for 5–10 minutes until foamy (this means the yeast is active).
3. Add melted butter, oil, salt, then slowly add the flour.
4. Mix until a dough forms.
5. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
6. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

👉 The dough should be soft but not sticky.

🧀 2. Make the Beer Cheese
1. Melt butter in a saucepan over medium heat.
2. Whisk in flour and cook for 1 minute (do not brown).
3. Slowly pour in the beer while whisking constantly.
4. Add milk and continue whisking until slightly thickened.
5. Lower the heat and add cheddar cheese gradually.
6. Stir until melted and smooth.
7. Season with garlic powder, smoked paprika, salt, and pepper.

🔥 The cheese sauce should be thick, not runny.
Let it cool slightly so it’s easier to stuff.

🥩 3. Prepare the Brisket Filling
1. Chop the smoked brisket very finely.
2. Mix with BBQ sauce and black pepper.
3. Let it cool completely before stuffing.

🧨 4. Assemble the Pretzel Bombs
1. Punch down the dough and divide it into 12–16 equal pieces.
2. Flatten each piece into a small circle.
3. Add:
• 1 spoon of chopped brisket
• 1 spoon of beer cheese
4. Carefully pull the edges together and seal tightly into a ball.
5. Place seam-side down.

⚠️ Seal very well or the cheese will leak!

🧂 5. Baking Soda Bath
1. Bring 10 cups of water to a boil.
2. Slowly add baking soda (careful, it will bubble).
3. Drop each pretzel bomb into the water for 20–30 seconds only.
4. Remove with a slotted spoon and place on parchment paper.

🔥 6. Bake
1. Preheat oven to 425°F (220°C).
2. Brush pretzel bombs with egg wash.
3. Sprinkle with coarse salt.
4. Bake for 15–18 minutes, until deep golden brown.

🧈 7. Final Touch
• Brush hot pretzel bombs with melted butter
• Optional: sprinkle garlic powder or parsley

• Extra beer cheese
• BBQ sauce
• Honey mustard
