Slow Cooker “Most Requested” Hardy Dinner

Instructions

  1. Layer the Foundation: You’ve already got the right idea. Keep your quartered potatoes at the very bottom. They take the longest to cook and will soak up all the flavorful juices from the meat above.

  2. Add the Star: Place the corned beef brisket directly on top of the potatoes, fat side up. Sprinkle the contents of the spice packet and the minced garlic over the meat.

  3. Pour the Liquid: Carefully pour the beef broth (or beer) into the side of the slow cooker so you don’t wash the spices off the meat. You want enough liquid to cover the potatoes but not necessarily submerge the beef.

  4. The Cabbage Cap: Arrange your cabbage wedges on the very top, exactly as shown in your photo. This allows the cabbage to steam to perfection without becoming mushy or waterlogged.

  5. Slow Cook: Cover and cook on Low for 8 to 10 hours (or High for 5 to 6 hours). The beef should be “fork-tender,” meaning it pulls apart with almost no resistance.

  6. Serve: Remove the meat and let it rest for 10 minutes before slicing against the grain. Serve alongside the tender potatoes and buttery cabbage.

 

Pro Tip: If you want a bit of a “glaze” on your beef, you can whisk together a little mustard and brown sugar, brush it on the meat after it’s done, and pop it under the oven broiler for 3-5 minutes.

Pro Tip: Optional Sweet Mustard Glaze

For a lightly caramelized finish:

  • Whisk together 2 tablespoons brown sugar and 2 tablespoons mustard.

  • Brush over cooked brisket.

  • Broil in the oven for 3–5 minutes until bubbly and lightly browned.

  • Add carrots for extra color and sweetness.

  • Serve with crusty bread to soak up juices.

  • Pair with a grainy mustard or horseradish sauce.
