Pineapple Coconut Dream Cake

1 cup unsalted butter, softened

4 cups powdered sugar

¼ cup coconut milk

1 teaspoon vanilla extract

½ cup toasted shredded coconut (for garnish)

Directions:

Prepare the Cake Batter:

1. Preheat Oven: Set your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

2. Mix Dry Ingredients: In a bowl, whisk together flour, sugar, shredded coconut, baking powder, baking soda, and salt.

3. Cream Butter and Sugar: Beat softened butter until fluffy. Gradually add sugar, mixing until well incorporated.

4. Add Eggs: Mix in the eggs one at a time, ensuring each is fully blended.

5. Combine Wet Ingredients: In a separate bowl, mix the crushed pineapple, coconut milk, and vanilla extract.

Combine and Bake:

6. Mix Together: Alternate adding the dry ingredients and the pineapple mixture to the butter mixture, beginning and ending with dry ingredients. Stir until just combined.

7. Bake: Pour the batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Frost and Garnish:

8. Prepare Frosting: Beat softened butter until creamy. Gradually add powdered sugar, coconut milk, and vanilla extract. Whip until smooth and fluffy.

9. Frost Cake: Spread frosting over the cooled cake and garnish with toasted shredded coconut.
