🧺 INGREDIENTS

⚠️ IMPORTANT: All ingredients must be at ROOM TEMPERATURE before starting (this is very important for texture).
• 1 cup cream cheese, softened
• 1 cup sour cream
• 4 sticks (2 cups) unsalted butter, softened
• 3 cups granulated sugar
• 7 large eggs, room temperature
• 1 teaspoon vanilla extract
• 3 ½ cups cake flour, sifted

🧁 EQUIPMENT NEEDED
• Stand mixer or hand mixer
• Large mixing bowl
• Bundt pan or loaf pans
• Spatula
• Fine sieve (for flour)

👩‍🍳 STEP-BY-STEP INSTRUCTIONS (VERY DETAILED)

🔹 Step 1: Prepare the pan
• Grease your pan VERY well with butter.
• Dust lightly with flour or line with parchment paper.
• This cake is heavy, so greasing properly is essential.

🔹 Step 2: Cream butter & cream cheese
• In a large bowl, add:
• Butter
• Cream cheese
• Beat on medium speed for 4–5 minutes.
• The mixture should become:
• Light
• Smooth
• Creamy
• No lumps at all

👉 Secret: The longer you cream, the softer the cake.

🔹 Step 3: Add sugar slowly
• Add sugar one cup at a time.
• Beat 2 minutes after each addition.
• Scrape the bowl often.

👉 This step creates air → which gives a tender texture.

🔹 Step 4: Add eggs (VERY IMPORTANT)
• Add eggs ONE BY ONE.
• Beat well after each egg (about 30–40 seconds).
• Do NOT rush this step.

👉 If you add eggs too fast, the batter may curdle.

🔹 Step 5: Add vanilla
• Add 1 teaspoon vanilla extract.
• Mix gently until combined.

🔹 Step 6: Add sour cream
• Add sour cream slowly.
• Mix on LOW speed until smooth.

👉 Sour cream keeps the cake moist for days.

🔹 Step 7: Add flour
• Sift the cake flour.
• Add flour in 3 parts.
• Mix on LOW speed after each addition.
• Stop mixing as soon as flour disappears.

⚠️ DO NOT OVERMIX or the cake will be dense and hard.

🔥 BAKING INSTRUCTIONS
• Preheat oven to 325°F (160°C)
• Pour batter into pan and smooth the top.
• Bake for 1 hour 20 minutes to 1 hour 30 minutes

👉 Check after 1 hour:
• Insert a knife or skewer
• It should come out clean or with few crumbs

❄️ COOLING
• Let cake cool in pan for 15–20 minutes
• Turn onto a wire rack
• Cool completely before slicing
