Meat balls with potatoes

Steps
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, oregano, and parsley. Mix until well combined.

3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned on the outside.

5. While the meatballs are baking, toss the diced potatoes with olive oil, garlic powder, salt, and pepper. Spread the potatoes on a separate baking sheet.

6. Roast the potatoes in the oven for 30-35 minutes, or until they are golden brown and tender.

7. Serve the meatballs with the roasted potatoes and enjoy!

Variations
There are endless variations you can try to customize your meatballs with potatoes:

– Add chopped onions and bell peppers to the meatball mixture for extra flavor.

– Substitute ground turkey or chicken for the ground beef for a lighter option.

– Mix in different herbs and spices, such as rosemary or thyme, to change up the flavor profile.

– Top the dish with marinara sauce or gravy for a saucier version.

Tips
Here are some tips to help you make the best meatballs with potatoes:

– Make sure to season the meatball mixture generously with salt and pepper for maximum flavor.

– Use a mix of lean and fatty ground beef for juicy and tender meatballs.

– Don’t overmix the meatball mixture, as this can result in tough meatballs.

– For crispy potatoes, spread them out in a single layer on the baking sheet and avoid overcrowding.
