Sugar-Free Condensed Milk (3 Ingredients Only)
This homemade sugar-free condensed milk is rich, creamy, and naturally sweetened without sugar, cream, or additives. It is ideal for low-carb, keto, and diabetic-friendly recipes, and it works beautifully in both hot and cold preparations. The texture thickens naturally through slow reduction, closely mimicking traditional sweetened condensed milk.
Ingredients
2 cups full-fat milk
Use whole milk for the best texture and mouthfeel. Lower-fat milk will reduce properly but will result in a thinner final product.
3 to 4 tablespoons powdered sweetener
Choose erythritol, monk fruit blend, or a stevia blend. The sweetener must be powdered to dissolve smoothly and prevent graininess. Adjust the amount according to your taste preference and the sweetness strength of your chosen sweetener.
2 tablespoons butter
Butter adds richness, gloss, and helps create a smooth, condensed consistency without using cream.
Step-by-Step Instructions
Step 1: Heat the Milk
Pour the milk into a heavy-bottomed saucepan. A thicker pan helps prevent scorching during the long simmer.
Place the saucepan over medium-low heat. Heat gently, stirring occasionally, until the milk is hot but not boiling. Avoid high heat, as boiling can cause separation or scorching and negatively affect the final texture.
Step 2: Reduce the Milk
Once the milk is hot, maintain a gentle simmer. Small bubbles may form around the edges, but the surface should never rapidly bubble.
Allow the milk to simmer for 30 to 40 minutes, stirring every few minutes to prevent sticking or burning on the bottom of the pan. As the milk reduces, stir more frequently.
The milk should reduce by approximately half. At this stage, it will appear slightly thickened, creamier in color, and more opaque.
Step 3: Sweeten the Mixture
Lower the heat slightly. Add the powdered sweetener gradually, stirring continuously to ensure it dissolves completely.
Taste the mixture once the sweetener is fully incorporated. Adjust sweetness if needed by adding small amounts at a time. Keep in mind that sweetness may become slightly more pronounced as the mixture cools.
Step 4: Add the Butter
Add the butter to the saucepan and stir until it melts completely into the mixture.
Continue simmering for an additional 5 minutes, stirring frequently. The condensed milk should become smoother, glossier, and slightly thicker, with a cohesive, creamy consistency.
Step 5: Cool and Thicken
Remove the saucepan from the heat and allow the mixture to cool slightly in the pan.
As it cools, the condensed milk will thicken further. Once warm but not hot, transfer it to a clean glass jar or airtight container.
Allow it to cool completely before sealing and refrigerating.
